Last week we took the 6-Minute Organic Lunchbox Challenge using the products from SCO and we loved it!
The Challenge:
Our challenge was to create a healthy and fun lunch that my kids loved using Santa Cruz Organic products in less than 6 minutes and we had fun getting creative and making an awesome lunch for the kids. For the challenge, I made some PB&J Apple Donut Slices along with some Corn Cake PB&J sandwiches.

Here is what I used:
- 1 apple cut in slices, flat like crackers, need 4 slices, cut out the center of the core so it looks like a flat donut hole.
- 2 slices of organic thin corn cakes, or rice cakes or you can use organic bread
- SCO Peanut butter, dark roasted creamy and light roasted crunchy
- SCO Fruit spread, concord grape and strawberry flavor
- 4 craft sticks or knives for spreading
- 2 sandwich bags
- 1 Lunchbox
- Bottle of water
- SCO Applesauce squeezeable pouch, either apple, or cinnamon apple
SCO PB&J Apple Donut Slices
1. First, I took a spoonful of dark roasted creamy and spread it on one apple slice
2. Then I took a spoonful of light roasted crunchy and spread it on the other slice of apple
3. Then I took another apple slice and spread concord grape on it
4. Then I took the last apple slice and spread strawberry on it.
5. Using layers I put them together, Crunchy, Concord, Creamy, and Strawberry
6. Then I slipped it in the sandwich bag and in the lunch bag.
Tips: kids can eat this like a sandwich or one slice at a time. This is so delicious my kids are in love with this treat!
Corn Cake PB&J Sandwich1. Take two slices of thin corn cakes (use rice cakes or slices of bread to substitute)
2. On one slice spread either dark roasted creamy and on the second slice spread light roasted crunchy Peanut Butter.
3. In the middle put little dots of concord grape and strawberry Fruit Spread and spread on the slice of corn cake/rice cake/bread
4. Place the two slices together and you are done
5. Insert into sandwich bag and insert into lunchbox
Last Step in the SCO Lunchbox: Don't forget to add a bottle of water and apple sauce squeezable pouch into your Organic Lunchbox!!
