This recipe is easy to make and results in a moist, chocolatey cookie with a hint of "healthy" thanks to the zucchini.
Chocolate Chocolate Chip Zucchini Cookies
You'll need:
- 1 tube of refrigerated chocolate chip cookie dough
- 1-2 cups of shredded zucchini (we used approx. 1 1/2 cups)
- 1/4 cup of baking cocoa
- 1/4 cup of brown sugar
- 1/2-1 teaspoon of cinnamon
STEP ONE: Preheat oven to the temperature indicated on the cookie dough wrapper.
STEP TWO: Break up the refrigerated cookie dough in a large bowl.
STEPTHREE: Add cocoa, brown sugar, cinnamon and zucchini and mix well.
STEP FOUR: Drop tablespoons of dough onto cookie sheets, approx. 2 inches apart. The dough will be wet (that's a result of the zucchini) and will spread during baking, so leave some room.
STEP FIVE: Bake according to cookie dough package instructions, usually about 10-12 minutes.
STEP SIX: Cool for 2-3 minutes on pan before removing and cooling on a wire rack.
