Ingredients:
- 1 1/2 cups fresh strawberries, sliced
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1/4 t ground coriander
- 1/4 t nutmeg
- 1 t ground cinnamon
- 2 eggs
- 1 t vanilla extract
- 6 T melted butter
Directions:
- Preheat oven to 350 degrees.
- Grease a 8 X 5 pan and dust with flour.
- Prepare strawberries by removing stems, rinsing, and slicing.
- In a large mixing bowl, combine all dry ingredients.
- In a medium bowl, beat the eggs until foamy and then add the vanilla and melted butter (make sure the butter isn't hot).
- Stir the strawberries into the liquid and then pour that mixture into the dry ingredients.
- Stir until combined, but don't overstir.
- Scrape into prepared pan and bake for about an hour.
- Check for doneness with a toothpick.
- Cool on a wire rack.
