MACARONI MENU: RAINBOW PINWHEEL COOKIES

Fun and Very Easy to Make

Since my kids love rainbow cupcakes and cakes, I found this recipe for Rainbow Pinwheel Cookies and with some alterations it was a huge hit with the kids.

INGREDIENTS

  • Your favorite sugar cookie recipe or one bag of Betty Crocker Sugar Cookie Mix.
  • Liquid food coloring, as desired (4 colors)
  • Hint: add flour to the sugar cookie recipe so the dough is not too sticky and is easy to work with.

DIRECTIONS

1. Preheat oven to 350°F.
2. Spray cookie sheet with a non stick spray.
3. Divide the dough evenly into 4 bowls.
4. Color each bowl with a different color of  food coloring. (Use a fork to mix and then use your hands to knead the color in evenly).

5. Roll each color of dough into olive-sized balls.
6. Combine a ball of each color and quickly roll into a larger ball.
7. Roll out your ball until you have a short, thin rope of about 12" .
8. Starting from one end of the rope, roll the dough into a coil. (We tried different shapes using cookie cutters or making the rope into numbers, but the coolest cookies were the coils)
9. Bake the cookies for 10 minutes, or until done.
