A Family Favorite We Make Once a Year Only On New Year's Eve

Many years ago I was a huge fan of a foodie blog where they showed you how to make different desserts. One of the recipes I discovered were Champagne Cupcakes which we make only on New Year's Eve and the kids adore them so much. My friends love it too and have started making them as well so I thought I would share with Macaroni Kid families. 

This is a huge favorite for New Year's Eve and we have been making them for about 8 years and its a big treat for the whole family and a kid friendly way for the kids to taste Champagne.

When I tried to find the original blog I discovered it no longer exists but Youtube saves everything forever so here is the video of how to make the cupcakes from the blog. I typed up the instructions for you so if I got something wrong please forgive me and watch the video instead:

Champagne Cupcakes Ingredients: 

  • 2 cups Granulated Sugar 
  • 3 cups all-purpose flour 
  • 1 tablespoon  Baking Powder 
  • 1/2 teaspoons Salt 
  • 1 cup Butter at room temperature and cut into cubes
  • 4 eggs 
  • 1 cup Champagne 
  • 1 teaspoon Vanilla

Cupcake Instructions

  1. Preheat Oven to 350F 
  2. Mix your dry ingredients in your mixer bowl: Flour, Sugar, Baking Powder and Salt
  3. Slowly add the Butter cubes until they are incorporated and they become grainy and no butter chunks
  4. Add the eggs and mix well
  5. Add the Vanilla and mix well
  6. Slowly add Champagne and mix well
  7. Fill your cupcake liners and bake for 20-22 minutes. 
  8. Remove from oven and let cool

Champagne Buttercream Ingredients: 

  • ½ cup butter softened
  •  3 cups powdered sugar 
  • 3-5 tablespoons champagne 
  • Shiny Sprinkles for decorations

Buttercream Instructions

  1. Cream your butter
  2. Add 1 cup powder sugar and mix well
  3. Add 1 tablespoon Champagne and mix well
  4. Add 1 cup powder sugar and mix
  5. Add 1 tablespoon Champagne and mix well
  6. Scrape the sides of the bowl and continue mixing
  7. Add the rest of the powder sugar
  8. Add 1 tablespoon Champagne and mix well
  9. Scrape the sides of the bowl and continue mixing
  10. Add 1 tablespoon Champagne and mix well
  11. If you are happy with your icing texture, you are ready to decorate, if its too stiff, add another tablespoon of champagne and mix.
  12. Ice your cupcakes and add your sprinkles
