As far back as I can remember, our family enjoyed my mom's homemade blueberry muffins on the weekends. This is such a simple and quick recipe, even the kids can pitch in to help make them. You can make them with frozen berries or fresh berries from the grocery store.
Ingredients:
- 2 cups of flour
- 3 teaspoons of baking powder
- Not quite 1/2 teaspoon of salt
- 8 tablespoons of sugar
- 1 egg, beaten
- 1 cup buttermilk (regular milk is Ok too)
- 3 tablespoons of melted butter
- 1 cup blueberries or other type of berries
Directions:
- Preheat oven to 425 degrees.
- Melt butter and combine with egg and milk. Set aside.
- In a large bowl, add dry ingredients and sift together.
- Add blueberries to sifted, dry ingredients.
- Add liquid ingredients to dry, mixing only until moistened. Don't over mix; avoid breaking the berries!
- Spoon into muffin pans.
- Bake at 425 degrees for 20-30 minutes or until golden brown.
Enjoy on their own or slice in half while warm and spread a bit of butter. YUM!
